Just like that, BAM, the mixture of roasted and grilled vegetables completing this steak salad with a herbed balsamic butter sauce is waiting for you as steam billows from the plate.
Healthy, nutritious, mouth-watering vegetables loaded with flavor from the slow roasted sweet potatoes to the char-grilled summer squash, corn and brussels sprouts all topped with that drizzle of the herb butter and balsamic sauce and the thinly sliced steak.
Savory, filling and energizing. It is just what you needed after a long day and better than any quick fix restaurant.

While I’d like to tell you I’ll have my food fairies deliver this to your house tonight a-stat, the reality is that unless you have  a professional chef or a hubby that knows exactly what you need and when you need it, most likely your reality is my reality. If you want it, you’re going to have to make it. Wha-wha-wha.
The good news, this meal is extremely easy to whip up. Don’t be fooled by the complex appearance. Although looking sophisticated it is as easy as knowing how to turn your oven and grill on. It really takes no time at all and that herbed balsamic butter sauce, it will stop you in your tracks, like literally.
The bad news, you kind of, sort of have to have the ingredients on hand in order to make such a crazy flavorful dish. This also kinda, sorta means that you need to go to the grocery store and have a little bit of a plan figured out.
Speaking of plan, do you want some inside dish on top-secret mission we are working on?
Figuratively speaking, if and when we talk about having a plan with your life, with your health and what you are going to cook for breakfast, lunch and dinner what would be of greatest value in making that plan?

Would it need to be compact or full-sized? Places for a budget, to write down your thoughts, challenges or even contain health tips?
Maybe I should back up and ask would a health-based daily planner be beneficial? A place to store all of your thoughts, memories, daily to dos, appointments, as well as meal plans, organize the family activities and hold you accountable to your health goals and personal (business) goals?

But seriously, just imagine for a second always having all of the ingredients on hand to make such healthy and crazy delicious dish? Like no thought, no worry, no more listening to the endless whining of hungry children collapsed at your feet as if they haven’t eaten in days. I mean that happens to you right?
To have a plan, to know what you are going to make before the time even arrives and better yet to have all of the ingredients at home and ready to be prepped. To cut the time it would take you to stress and pace over what you are going to make only to dirty all the dishes in your home creating hours of clean-up work all while trying to hold crying kids. And if they aren’t crying, trying to keep them from eating everything in site so that when the dish is made, they are still hungry enough to eat it and you aren’t left at the dinner table by yourself and exhausted from the work it took to make the meal and the stress of knowing what is left only to have everyone else be over dinner. Like over it.

Grilled Veggie & Steak Salad with Herbed Butter Sauce

INGREDIENTS
  • 1 summer squash
  • 4 ears sweet corn
  • 3 cups brussels sprouts, thinly sliced
  • 3 medium sweet potatoes, peeled and diced
  • 2 cups green beans
  • 2 Tbsp olive oil
  • 2 steaks (of choice)
  • Salt & pepper, to taste
  • Sauce
  • 6 Tbsp butter
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp dried sage
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp dried basil
INSTRUCTIONS
  1. Preheat oven to 400 degrees.
  2. Slice summer squash into ½ inch thick slices.
  3. Husk the sweet corn and thinly slice the brussel sprouts. Set aside.
  4. Meanwhile peel and dice sweet potatoes and cut green beans.
  5. In a bowl add sweet potatoes, green beans, olive oil and salt & pepper.
  6. Place on a baking sheet and bake for 30 minutes or until tender.
  7. Meanwhile salt & pepper the veggies and drizzle place on the grill with the steaks.
  8. Cook until tender.
  9. While the veggies are being roasted and grilled make herbed butter sauce by melting 6 tablespoons of butter and add balsamic, sage, thyme, oregano and basil. Mix well.
  10. To prep, cut corn off the cob and place all veggies on a plate with thinly sliced steak and drizzle with herbed butter sauce.
  11. Enjoy!
